Like a little piece of paris in small-town ontario, this bistro beckons foodie wayfarers. L’auberge opened last february with a gourmet shop, bakery and café in front of the dining room, which means you can browse for fleur de sel and chestnut purée while your steak frites sizzles in the open kitchen. Chef jean-marc salvagno, a multitalented french expat, turns out artisanal breads and five-star pastries and puts a seasoned spin on standards like duck and foiegras. An expertly poached organic egg blankets a provençal frisée salad, tossed with pine nuts and sautéed oyster mushrooms, the plate ringed with tender wedges of duck gizzard. Fat scallops, shrimp and striped sea bass make bouillabaisse a treat. The pastries are a must: flaky, fruit-laden tarts and profiteroles dripping with chocolate. The wine list is assured and offers good value. |
